Peanut Butter & Jam Muffins
Ingredients
2 cups flour
1/3 cup sugar
1 Tablespoon baking powder
1/2 teaspoon salt
1/2 cup of peanut butter
1 cup milk (2%)
1 egg
1/4 cup vegetable oil
1/2 cup Welch's Grape Jam
Preparation
1. Preheat oven to 400° F.
2. In a large mixing bowl, combine the flour, sugar, baking powder and salt. Add the peanut butter mixing until crumbly. Add the milk, egg and oil and mix until just blended.
3. Spoon half the batter into 12 paper-lined muffin tin cups. Spoon 1 Tablespoon of Welch’s Grape Jam into the center of each muffin. Cover with remaining batter.
4. Bake in the preheated oven for 18 – 20 minutes until lightly browned. Serve warm or at room temperature.
